1990 Dom Perignon
Golden, small bubbles. Apples, touch of nuts, minerals, somepears, started out a touch earthy but gets fresher with air. Minerals, almost flinty, lots of brioche. Fresh acidity, fruity, rounded, somewhat lazu mousse, quite intense brioche and almost flinty minerals, long. 95

2011 Maison Louis Latour Chassagne-Montrachet 1er Cru
Pale lemon yellow. Apples, minerals, some oysters, almost Chablis like nose. Fresh acidity, fruity, rounded, fresh, lemony and lively, long. 90

2000 Raveneau Chablis 1er Cru Monts Mains
Pale lemon yellow. Lemons, minerals, detailed, youthful, apples, flinty and intense chalk note nose. Fresh acidity, apples, lemons, fresh and lively, detailed, almost a touch smoky, lemony and minerals finish. 94

1983 Château Margaux
Ruby, thin garnet rim. Leaps out of the glass, scented, leather, cedar, cassis, blueberries, figs, layered, seductive and nuanced. Violets, absolutely gorgeous nose. Fresh acidity, ripe tannins, fruity, maturing, still some structure, needs quite a bit of air to open, even after an hour in decanter quite tight and firm. Tobacco, cassis, blueberries, figs, leather, superb length. 98

1983 Château Haut-Brion
Ruby, garnet rim. Plums, scented, red berries, spices, exotic, cassis, some figs, layered and nuanced, superb nose, flirting and seductive. Fresh acidity, ripe tannins, fruity, cassis, structured, intense, layered, firm, nuanced, red fruity, some cherries, quite intense, cedar and tobacco, long finish. 96

1983 Château Léoville Las Cases
Ruby, garnet rim. Cassis, blueberries, some eucalyptus and lifted notes, tobacco, leather. Fresh acidity, ripe tannins, firm, cassis, leather, some spices, red berries, cherries, nuanced but tight, long. 94

1990 Drouhin Bonnes Mares
Ruby, towards brick rim, quite a bit of sediments. Floral, red berries, some cherries, bit sweet and sour and sous bois. Floral, violets, detailed nose, some spices. Fresh acidity, ripe tannins, still quite firm, structured, almost a touch bitter. Liquorice notes, red berries, touch woody still, juicy, cherries, layered, deeper, long. Served blind, with answer in hand, the youngest bottle of this. 96

1947 Château Caillou Creme de Tete
Pale amber, green tint. Vanilla, dried apricots, some peach notes nose. Freshish acidity, fruity first before a bit bitter finish, somewhat hollow, sugary. Caramel. With more air apple cake, crumble. 89

1989 Boizel Joyau de France
Pale golden, small bubbles. Apples, minerals, slight nutty note, some butter, elegant nose, fairly youthful. Fresh acidity, elegant mousse, fruity, rounded, light sweet note, some yellow fruits, elegant minerals, quite detailed, just a little bit hollow. Long. 92

2010 Château Phélan-Ségur
Deepish ruby. Rich nose, some blackcurrants leaf, gamey, spices nose. Fresh acidity, ripe tannins, sweet, ripe fruits, spices but bit hollow and herbal finish, good length. 89

2007 Tenuta il Sogno Bricco Soria
Ruby. Liquorice, cherries, fruity, quite mature nose. Fresh acidity, ripe tannins, fruity, ripe, bit thin, some say not optimal bottle. 84

2001 Angerville Volnay 1er Cru Clos des Ducs
Bright ruby. Elegant, red berries, scented, some spices, not that tight for the vintage. Quite lovely nose. Fresh acidity, ripe tannins, fresh, elegant, leaner, red berries, somewhat tight but quite lovely now, opens up nocely with air, if always somewhat tight. Long. 91


2000 Solaia
Deep ruby. Rich, coffee, dark fruits, eucalyptus, vanilla, spices, intense nose. Fresh acidity, ripe tannins, fruity, ripe, leaner palate, somewhat cooked fruits, leaner finish. 90

1996 Henriot Cuvée des Enchanteleures
Pale golden, small bubbles. Apples, butter, minerals, nutes, ripe apples, autumn leaf touch, somewhat yellow fruity. Fresh acidity, elegant mousse, fresh and elegant, lively, detailed, some nuts and yeast, long. 94

1996 Dom Perignon
Pale lemon yellow, tiny bubbles. Apples, elegant mineality, citrus, youthful, detailed, elegant and layered nose, some plaster, even slightly floral. Fresh acidity, elegant mousse, superb mousse actually, detailed, lighter mid palate but fruit and details to follow up, long. 96

Bright ruby, garnet rim. Dark fruits, scented, tar and roses, cherries nose. Fresh acidity, ripe tannins, ripe fruits, rich, sweet notes, good length. 89

Bright ruby. Scented, red berries, some spices, quite intense nose. Fresh acidity, ripe tannins, fruity, intense, ripe red berries, cinnamon, some strawberry jam, slight anise touch, good length. 88

Served blind. Towards golden, small bubbles. Brioche, some oxidized apples, minerals, flinty, smokey note, bread crums. Fresh acidity, rounded mousse, fuller, brioche, apples, rounded, fruity, minerals finish. 91

Pale lemon yellow. Apples, minerals, lemons, linear, detailed, floral, nuanced and complex. Fresh acidity, rounded, lemons, minerals, elegant, fresh, almost crisp, lime, detailed, long and nuanced finish. 94

2007 Bonneau du Martray Corton-Charlemagne
Served blind. Pale lemon yellow. Citrus, minerals, orange blossoms, detailed, ever so slightly yellow fruity nose, layered and nuanced nose, gorgeous. Fresh acidity, rounded, fruity, detailed, almost tender attack before quite intense mid palate and finish, some tropical notes in the finish, long. 95

2008 Blain-Gagnard Montrachet
Served blind. Pale lemon yellow. Ripe yellow fruits, minerals, layers, light nutty note, ripe lemons, scented. Fresh acidity, lively, fruity, intense, detailed, playful and mouthwatering, quite extreme, layers upon layers, amazing length. Creamy, detailed, needed time to open, few hours in decanter. Wide. 98


1983 Charles Laurent Fils Chambertin-Clos-de-Bèze
In neck fill. Brick with small ruby core. Redcurrants, sous bois, faint leather, faint herbs note, slightly scented. Lovely nose. Fresh acidity, few tannins, redcurrants and some strawberries, leaner palate, ever so slightly drying, some astringency still. Getting nore and more scented and elegantly fruity with air. Long. 93

1986 Château Margaux
High fill, 4mm below cork. Ruby, very thin brick rim. Intense nose, scented, cassis, violets, cedar, detailed, elegant and nuanced nose, layered, highly seductive. Fresh acidity, high of ripe tannins, fruity, intense, cassis, dark chocolate, scented, still firm, youthfull bottle, superb, very long. 96

1989 Château Margaux
Ruby, garnet rim. Scented, detailed, cassis, violets, highly seductive nose, gorgeous nose, ripe, touch of figs, cedar, rich tobacco but mostly beautiful and intense fruit. Fresh acidity, ripe tannins, mouthwatering, detailed, superb balance, elegant and nuanced, dark berries, such intensity, very long. 98

Pale lemon yellow, tiny bubbles. Apples, minerals, tight, flinty and nuanced nose. Fresh acidity, rounded and fruity, elegant and fresh, fruity finish, long. 93

1996 Duval-Leroy Femme:
Pale lemon yellow, tiny bubbles. Apples, minerals, flinty and intense nose. Fresh acidity, elegant mousse, intense, fruity, crisp and mouthwatering, fresher than a bottle two years back, long. 94

Pale lemon yellow, tiny bubbles. Elegant, intense, subdued at the same time, nuanced and refined nose. Cool fruits. Fresh acidity, elegant mousse, slightly sharp and edgy still, leaner and focused palate, needs time to polish of the edges, bit bitter finish, long. 94

2004 Taittinger Comtes de Champagne:
Pale lemon yellow, tiny bubbles. Apples, lemons, minerals, cool, fresh and elegant nose, oysters and seafront minerality. Fresh acidity, elegant mousse, lovely balance, toast, yeast, burnt bread note, long. 93

2004 Perrier-Jouët Belle Epoque:
Pale lemon yellow, tiny bubbles. Apples, subdued minerals, floral, pure nose. Fresh acidity, elegant mousse, leaner palate even if fairly ntense fruit, long. 92

2004 Dom Perignon:
Pale lemon yellow, tiny bubbles. Minerals. Toast, richer and deeper nose than last bottle, intense. Fresh acidity, elegant mousse, flirting and rounder palate, long. 93

2005 Roederer Cristal:
Third bottle in four days, life is hard sometimes. Pale lemon yellow, tiny bubbles. Pure, nuanced and tender nose. Apples, minerals, lime, cool feel to it. Fresh acidity, elegant mousse, fresh, nuanced, intense yet subtle, long and elegant. 94

Krug Grande Cuvée:
Pale lemon yellow, tiny bubbles. Apples, minerals, toast, focused yet richer or rather deeper nose. Some yeast. Fresh acidity, elegant mousse, fresh, crisp, fruity, lovely balance, richer, intense and long. 94

Salmon with small bubbles. Apples, red berries and minerals nose. Fresh acidity, fruity, minerals beneath, lively, almost a touch rustic finish, bitter touch. 90

2002 Dom Ruinart:
Pale lemon yellow, tiny bubbles. Apples, minerals, nuanced, lively and layered nose. Fresh acidity, elegant mousse, lively, focused and long. 92+

2003 Dom Perignon:
Pale lemon yellow, tiny bubbles. Apples, minerals, more focused than earlier bottles on the nose. Fresher acidity and tighter mousse as well, even if not tight compared to other vintages, more elegant and nuanced than before. 93

Krug Grand Cuvée:
Pale lemon yellow, tiny bubbles. Apples, minerals, layered and complex nose. Fresh acidity, elegant and lively, refreshing and superb texture and balance, refined. Layered and long. 95

Pale pink. Fresh and red berry notes on the nose. Fresh acidity, leanish body, good mousse, somewhat bitter finish, good length. 85

Veuve Clicquot Brut Rosé:
Pale pink. Apples and some minerals, subdued nose. Fresh acidity, more nuanced, quite elegant fruit and mousse, fresh finish. 87

2004 Moet & Chandon Grand Vintage:
Pale lemon yellow, small bubbles. Autolyses, apples and some yellow plums and minerals. Fresh acidity, elegant mousse, good length. 89

2003 Dom Perignon:
Pale lemon yellow, tiny bubbles. Fresher and cooler feel than last bottle, feels livelier and more nuanced. Apples and minerals more than yellow fruits. Fresh acidity, elegant mousse, slightly edgy and not feeling quite together and complete. 89

03 Dom Perignon

2003 Dom Perignon:
Pale lemon yellow, tiny bubbles. Apples, minerals, quite fresh nose for the vintage. Acidity works nicely but the mousse is a bit lazy, and it feels more relaxed and laidback than most Dom Perognon's. Still not that rich and not too much yellow fruits as some 03's. Long. 90

1971 Dom Perignon


1971 Dom Perignon:
Deep golden, just some bubbles (could be the glass). Rich nose, still yeast undertone, fruit stones, brioche, touch of caramel on the nose. Fresh acidity, mousse is more or less gone, so it feels more winy than sparkling. Sweetish fruit, a lovely bottle even i've had it several times with more mousse, and therefore freshness. Good length. 88

1983 Dom Perignon;
Golden, tiny bubbles. Fresh, intense, brioche, coffee, orange marmalade. Fresh acidity, rich mousse, rich palate, more focused finish, leamon and salty seaweed. One of the best 83 DP bottles I've had. 94

02 Dom Perignon

2002 Dom Perignon;
I've had this so many times this autumn it's almost embarrasing, this one of the more open bottles, fresh and almost agressive mousse and acidity, lively, minerals and lime, tight DP, focused, I would give it some more time, but seems to give a bit more every month. 93

40 years of Dom Perignon, old is fantastic!

Almost like any normal range of aperitif?

1969 Dom Perignon;
Pale amber, mushrooms, minerals, oxidized apples and orange marmalade. Fresh acidity, focused, mature and mouthwatering, layered, fresh finish, one of the best 69 DP's I've had. 94


1966 Dom Perignon;
Pale amber, feels young compared to some from the seventies, complex, refined, layered, enormous nose! Gorgeous mousse and texture, lively acidity, minerals, mature and at peak? Long. 97

1964 Dom Perignon;

Pale amber, pink hue, again this young feel, young as in the 66. Similar style as well, but this with more lemon candy and a touch of caramel, just to make it slightly more fat. Superb texture, superb acidity, layered, complex, stunning length. 98

1962 Dom Perignon;

Amber, good acidity, mousse almost gone, not that interesting nose, mushroom finish. 82

1961 Dom Perignon;

There were supposed to be forty yers you say, and I will tell you, yes I know! But our host Rake had a 1961 that felt lonely, so here it comes. Amber, oxidized, tired..... Nothing much, but even so, always surprising that RR just happens to have something like this laying around.... Well, surprising.....

Why was there no 1979 made from Dom Perignon?


1975 Dom Perignon;
Golden, amber hue. Orange marmalade, minerals, caramel, nuts, butter, lemon drops, touch of camphor and oxidized apples. Fresh acidity, elegant mousse, burnt butter finish, have had better 75,'s, but better than the aperitif! 92

The Oenotheque is still remarkably young in comparison....

Golden, amber hue, tiny bubbles. Some smoke, otherwise this one doesn't wan't to tell much. Fresh acidity, a bit lean, somewhat simple style (for DP). 89

The plot thickens? A lot of wine between two guys....

1971 Dom Perignon;
Golden, amber hue, tiny bubbles. Lemon candy, yellow plums. Light and soft as velvet, nuanced, flirting, transparent, with a creamy texture. A touch bitter in the finish. Very elegant, but does it lack a bit? My fellow tasters was kinder than me..... 90


1970 Dom Perignon;
Golden, amber hue. Caramel, richer style, minerals, intense, ripe fruits, feels younger again, dades, acidity is on the lazy side though, long. 92

Golden, tiny bubbles, smoky, yeast, orange marmalade over fresh apples, flinty and minerals. Fresh and high acidity, elegant mousse, perfect balance, very long. 96

The best cod in history, and it might have little to do with the cod itself?!

1985 Dom Perignon;
Golden, tiny bubbles, minerals, lime, lemon, fresh lively almost closed feel, refined, slightly bitter, very long. 95

1982 Dom Perignon;
Golden, amber hue, tiny bubbles. Flint, minerals, lemon and apples, fresh and lively feel to it even if evolved aromas like nuts are appearing. Fresh acidity and creamy mousse, smoky caramel finish, giving Ilay assosiations. 94

The camera-man seems to have trouble getting the camera focused.....

1976 Dom Perignon;
Golden with amber hue, caramel and nuts, smoke and chocolate, starting to oxidize, heavier and more evolved than my last bottle from my fathers cellar. Fresh acidity, sweet feel, ripe, plum stone, good length. This bottle falls apart quickly in the glass (10-15 minutes) 91 at it's very best.

1992 Dom Perignon;
Pale golden, flinty minerals, bod fire, deep flavours. Fresh acidity, good mousse, quite long but not exciting. 89

Norwegian lobster, ready for the risotto. For those readers who haven't tried Norwegian lobster, it's the best lobsters out there!

1983 Dom Perignon;
Corked!

Even the risotto is made with Dom Perignon.....

1980 Dom Perignon;
Golden, camphor, King of Denmark drops, touch of sweet fruits. good acidity, long if lean. 89 for those who like the style....

Finished risotto, excellent! And matching the plate nicely as well!

1978 Dom Perignon;
Golden, tiny bubbles. Fresh feel and minerals, lively, towards high acidity, playfull, layered and transparent, very long if not as complex and refined as Cristal. 94

Heini making some perfect virgin lobsters, even if the coriander did little to help the wines flavours.

2002 Dom Perignon;

My fourth 2002 DP in a week, this the most open of them, lemon, lime, youthfull, and actually the freshest feel as well. Fresh acidity, elegant mousse, slightly sharp now, but will integrate beautifully. Lime, minerals, lively and refined, long. 94 for now.

1996 Dom Perignon;
I was looking forward to this one, haven't tasted it for about two years, used to be a favorite, now adding body, richer and more fruity than I remember, brioch, and that lovely mousse. Fresh acidity, quite intense DP, lively and still subdued, long apply finish. 94

1995 Dom Perignon;
Lemon yellow, tiny bubbles, tight, lime, sharp (if subdued), flint, touch of cheese. Fresh acidity, ripe lemons, more focused than 96, something I like, elegant mousse, refreshing, lively, just a little bit short for higher marks. 94-95

1990 Dom Perignon;
Starting gold with tiny bubbles. Richer again, yellow plums and apples, elegant texture, lively, feels more complete than the 90 Cristal, and not as ripe. Elegant, good length. 92

40 years of Dom Perignon, lets start, the first four!

2000 Dom Perignon;
Pale lemon, tiny bubbles, flint and smoke, over mature feel of fruit, minerals, and yellow plums. Rich texture, good acidity, slightly bitter, almost beery finish, good length. 91

1999 Dom Perignon;
Pale lemon yellow, quite a different attitude, lemon, lime, flint, tight, sea front, minerals and shell fish. Fresh acidity, elegant mousse, long. A few hours later, openeing up tremedously, refined and layered. Loved this one since day one. 94

1998 Dom Perignon;
Pale lemon, tiny bubbles. Tight nose, if rich behind, feels flatter again than 99, but not as ripe as 00. Acidity and mousse id firmer, more refreshing and creamy, feels closed. Surpricing green apples on the palate, here it feels almost unripe and a touch bitter, hops. 93 on quality more than pleasure.

1993 Dom Perignon;
Pale golden, minerals, lemon, yellow apples, good acidity, integrated, elegant mousse, feels lazy, somewhat tired finish. Not good enough for a DP.... 86
